(Spatchcock is the same thing as butterflied :-))
Here’s a recipe that’s extremely healthy and easy. Your entire meal cooks together in the oven. First, take notice when whole chickens go on sale and buy a couple. Trust me, once your family tastes this, they’re gonna want you to make it again soon!
Wash your chicken and remove the innards. Preheat oven to 425 degrees.
Then, learn how to butterfly a chicken. Listen to me. It’s far easier than you think. There’s only a couple steps. Follow the instructions in the link below. Just believe me when I tell you; YOU CAN DO THIS! Get your chicken, cutting board, knife/kitchen scissors and learn a new skill.
Next, season your butterflied chicken. I use sage, salt/pepper, rosemary and a little garlic powder. Just rub these under the skin.
Lay your prepped chicken in a large iron skillet breast side facing you.
Prep small potatoes (or chopped large potatoes) using rosemary, salt, and a little olive oil. Place these in another baking dish (I used another cast iron skillet).
Put the chicken and potatoes in pre-heated oven for 30 minutes.
Then place cut asparagus seasoned with olive oil and salt in another baking dish under the chicken/potatoes. Bake for 20 minutes or until chicken gets to an internal temp of 160 to avoid any sickness.
Your kitchen will smell amaze-balls!! My family can hardly wait to dig in when I make this meal. ENJOY!
