With two pre-teen boys in the house, I have a hard time keeping the pantry stocked without wiping out our food budget. Anyone feel me on this one? We have 3 children and they are constantly rummaging the kitchen looking for snacks and just like adults, they get tired of the same old thing. They love granola bars but can polish off a box in just 1 day if I let them. I decided to peruse Pinterest and find recipes for making them at home. Turns out, it’s SUPER easy, y’all! And oh my gracious, they taste far better than the store-bought. The children scarfed these down and begged me to make more. Because they are homemade, the combos are endless! And yes, they are far cheaper than the store-bought brands.
Here’s what you’ll need:
- 1 stick butter
- 1/3 cup brown sugar
- 1/3 cup honey
- 1 tsp vanilla
- 2 cups old fashioned oats
- 2 cups rice crispy cereal
- 1 cup chocolate chips
Begin by toasting your oats on a sheet pan for only 5-10 minutes on 400 degrees. Watch them closely because they burn fast. Once they start to brown slightly, remove them from the oven.
Then melt the stick of butter in small sauce pan on medium heat. You don’t want to burn it.
Once the butter begins to melt, add the vanilla, brown sugar, and honey to it making sure it’s well combined. Let it gently bubble until the sugar dissolves. Immediately remove from heat.
Pour butter mixture over oats/rice cereal in a large mixing bowl.
While mixture is warm and sticky, press it into a 9×13 dish that is sprayed or buttered so bars will remove easily. Then press in the chocolate chips on top of the oat mixture while it’s still warm. Beware, it may still be hot and could burn you.
Then place in the fridge for about an hour to allow them to set. Then cut them into the size you prefer and enjoy! They taste sooooo good and fresh with NO preservatives. You can make so many combos including
- peanut butter/chocolate chip
- M n M’s
- oatmeal raisin
- S’more with marshmellows
- cranberry pecan
Either wrap individually in clear wrap or put into snack size baggies (that’s the method I prefer).
