Are you ready for a recipe that’s gonna blow your tastebuds away? Well, I developed one and I’m so thrilled with how it turned out!! These are the perfect combo of chocolate and coffee combined. Like a mocha explosion in your mouth!! (I couldn’t figure out if I should file this under “Budgeting” or “Self-Care.”) ha ha ha
- 1 stick butter melted
- 1 cup almond milk (or whatever you like)
- 2 eggs
- 1 tbsp vanilla
- 1 cup sugar
- 1 tsp baking soda
- 1 tbsp baking powder
- 2 tbsp ground coffee beans (Adam makes our fresh so it smells amazing in here)
- 1/3 cup cocoa powder
- 2 1/2 cups all purpose flour
- 2 cups chocolate chips
Preheat oven to 400 and spray muffin tins.
In a large bowl, mix wet ingredients. Then add sugar and mix well. Then add coffee grounds and cocoa powder, and combine thoroughly. Next add other dry ingredients and combine. DO NOT over-mix batter. Pour into muffin tins (we have several different kinds) and bake for about 18 minutes. Watch closely so they don’t over-cook or burn.
This recipe make about 21 medium-sized muffins.
